  1. 1/2 cup long-grain rice

  2. 1/4 cup loose black tea 3 tablespoons brown sugar --

  3. 4 small skinless duck breasts

  4. 2 tablespoons unsulfured molasses

  5. 2 teaspoons Dijon mustard

  6. 1 teaspoon salt

  7. 1/2 teaspoon fresh ground black pepper

  1. Preparation : In a large shallow dish, combine molasses, salt, mustard and pepper. Add duck and coat them. Cover and refrigerate overnight. Smoke until medium rare- about 15 minutes. Let rest 5 minutes before slicing. Serve warm or cold.
