  1. 1 frenched rack of lamb

  2. 2 tbs Dijon mustard

  3. 1 tsp balsamic vinegar

  4. 2 tbs minced rosemary

  5. 4 cloves minced garlic

  6. 1/2 tsp thyme

  7. 1/4 tsp ground sage

  8. 1/4 tsp fresh parsley

  9. 2 tsp black pepper

  10. 1 tsp salt

  11. 2 tbs olive oil

  12. 1 tbs sesame oil

  13. 1 cup fresh bread crumbs (use flavorful bread for a better result. I use oatmeal wheat and it's great)

  1. Preheat oven to 450 Trim excess fat from rack of lamb with a sharp knife Generously coat with salt and pepper Heat sesame oil in a skillet and brown rack on each side for about 2 minutes per side. Remove from heat In a small bowl combine mustard, balsamic vinegar, sage and thyme Coat rack with mustard mixture thoroughly Combine rosemary, bread crumbs, minced garlic, parsley and olive oil. Mix well Coat the rack with the breading, working it into the rack by hand Place on baking dish and roast for approx 20 minutes for medium rare Allow to rest for at least 10 minutes before dividing
