  1. 1 tablespoon olive oil

  2. 1/2 onion , chopped

  3. 2 chopped garlic cloves

  4. 1 (8 ounce) can black beans , rinsed and drained

  5. 1 cup jarred chunky salsa

  6. 1 tablespoon fresh parsley or 1 tablespoon cilantro

  7. 1/2 teaspoon cumin

  8. 1 tablespoon taco seasoning

  9. 1 tablespoon hot sauce

  10. 2 cups white rice

  11. 2 tablespoons shredded cheese

  1. Sauté onion and garlic in oil.

  2. Add beans and salsa.

  3. Add seasonings to taste.

  4. Simmer until heated through.

  5. Serve over rice and garnish with cheese. ?
