  2. 1 cup all purpose unbleached white flour

  3. 3/4 cup yellow cornmeal

  4. 1 tablespoon baking powder

  5. 1 teaspoon salt

  6. 3 tablespoon sugar (3 to 4)

  7. 3/4 cup buttermilk

  8. 1/4 cup whole milk

  9. 2 eggs beaten

  10. 1/3 cup butter or margarine melted

  1. Optional: 1 8-oz. can corn, draines well.For a sweeter cornbread use 1/3cup sugar. Preheat oven to 425 degrees. Using about 2-3 tablespoons ofshortening, grease a 9 inch cast iron skillet. Place the skillet in thepreheated oven. In a large mixing bowl, combine all the dry ingredientstogether. Blend well. In a smaller bowl add buttermikl, milk and eggs. Addthe melted margarine and mix well. Add the liquid mixture to the dryingredients and mix well. Fold in the corn.

  2. Remove the hot skittle from the oven and carefully pour in the batter.

  3. Return the skillet to the oven, remembering that the skillet is still hot.

  4. Bake for 25 minutes. Remove to a plate and rub top with a stick of butteror margarine.
