  10. Marshmallows 1/4 - teaspoon salt

  11. 1/3 cup 65g / 2 1/3oz Chopped 1/3 cup sugar

  12. Blanched almonds, toasted

  13. 1 cup 237ml Heavy cream, whipped

  1. Drain pineapple and cherries, reserving syrups. Chop cherries.

  2. Combine syrups and raisins; heat to boiling. Add marshmallows; stir till dissolved.

  3. Cool; add pineapple, cherries, nuts, lemon peel and juice, rum flavoring.

  4. Beat egg whites and salt till foamy; gradually add sugar, beating to stiff peaks.

  5. Fold into mixture. Fold in cream.

  6. Freeze firm in refrigerator tray.
