  1. 3 T butter

  2. 3 T all-purpose flour

  3. 2 cups milk

  4. 2 cups cheddar cheese , shredded

  5. 1 T Dijon mustard

  6. 2 cups diced ham

  7. 1 package (24 oz) frozen hash brown potatoes , thawed

  8. 1 10-oz package frozen chopped spinach , thawed and well-drained (I have also used fresh broccoli , cut into very small spears, & it's still delish.)

  9. 1/2 cup buttered bread crumbs , optional

  1. Heat oven to 350°.

  2. Over medium heat, melt butter in large saucepan.

  3. Add flour, stir until smooth.

  4. Add milk gradually.

  5. Cook, stirring constantly, until thick & bubbly.

  6. Remove from heat, stir in cheese & mustard.

  7. Place half the diced ham in a lightly greased casserole dish.

  8. Top with half the hash browns and half the cheese sauce.

  9. Spoon spinach over the top.

  10. Repeat layers.

  11. Top with buttered bread crumbs if desired.

  12. Bake for 45 minutes.

  13. SErves 6 to 8.
