  1. 1 Garlic clove - minced

  2. 1 tablespoon 15ml Olive oil

  3. 1 Frozen chopped spinach - (10 oz) - thawed, squeezed dry

  4. 1/4 teaspoon 1 1/3ml Salt

  5. 1 Freshly-ground black pepper

  6. 3 Bacon - cooked, crumbled

  7. 1/2 cup 73g / 2.6oz Shredded Mozzarella cheese

  8. 1/2 cup 118ml Loaf Italian bread (small)

  9. 1 tablespoon 15ml Shredded Parmesan cheese

  1. In a large skillet saute garlic in olive oil over medium heat. Add spinach, salt and pepper; cook, stirring occasionally, until heated through. Remove from the heat, cool for 5 minutes. Add bacon and mozzarella, mix well.

  2. Slice bread horizontally. Divide and spread the spinach mixture on each half. Sprinkle with Parmesan if desired. Bake at 450 degrees for 6 to 8 minutes or until cheese is melted.

  3. This recipe yields 2 servings.
