  9. 1 (4-lb) chicken

  10. 6 c Peanut oil

  11. 5 Green onions

  12. 1 Head iceberg lettuce -- cut -into strips 1/4 x 2 3/4 lb Carrots -- cut into strips

  13. 2 1/4 oz Picked scallions

  14. -(tops & bottoms)

  16. 2 1/2 oz Picked red ginger

  17. -cut into long, thin strips

  18. 1 1/2 oz Chinese pickles

  19. -cut into thin strips

  20. 2 1/2 tb Peanuts, roasted & ground

  21. 2 1/2 tb Coconut, roasted and ground

  22. 1 1/4 tb Sesame seeds

  23. 1/4 ts Salt

  24. 1/4 ts Sugar

  25. 1/8 ts Black pepper

  26. 1/2 ts Powdered hot mustard,

  27. -mixed with...

  28. 1/2 ts Water

  29. 1 1/4 tb Hoisin sauce

  30. 1 1/4 tb Chinese barbecue sauce

  31. 1 1/4 tb Oyster sauce

  32. 1/2 ts Soy sauce

  33. 1/2 ts Sesame oil

  34. 1/2 c Parsley, chopped fine

  35. 1/4 lb Won ton pastry -- cut in

  36. -long strips & deep fried

  37. The day before, either prepare the chicken broth using

  38. a standard recipe or use canned chicken broth for convenience. Slowly simmer the chicken broth until the

  39. meat is cooked through. Place the chicken out

  40. overnight to dry. The next day, deep fry it in peanut

  41. oil and then separate the meat from the bones. With

  42. your hands, tear the meat into long narrow strips. Cut the green onions, carrots, ginger, and pickles into long strips. Combine the green onions, lettuce,

  43. carrots, scallions, red ginger, pickles, peanuts,

  44. coconut, and sesame seed. Mix well. Add the chicken.

  45. Starting with the sugar, mix the rest of the

  46. ingredients with the exception of the parsley and won

  47. ton until thoroughly combined. Just before serving,

  48. add the parsley and won ton pastry and toss lightly.
