  1. 1 teaspoon 5ml Olive oil

  2. 2 teaspoons 10ml Onions (medium)

  3. 2 Garlic - minced

  4. 56 oz 1591g Canned tomatoes or 3lb fresh

  5. 15 1/2 oz 440g Red kidney beans

  6. 15 oz 426g White kidney beans

  7. 15 oz 426g Chickpeas

  8. 1 1/2 cups 165g / 5.8oz Chopped celery

  9. 1 Green pepper - chopped

  10. 3 tablespoons 45ml Lime or 2 T lemon juice

  11. 1 tablespoon 15ml Chili powder

  12. 1 1/2 teaspoons 7 1/2ml Oregano

  13. 1 1/2 teaspoons 7 1/2ml Cumin

  14. 1/4 teaspoon 1 1/3ml Cinnamon

  15. 12 oz 340g Light beer

  16. Dry roasted peanuts

  17. Cheddar cheese

  1. In a large pot, heat oil and saute onions and garlic until soft.

  2. Add all ingredients except beer, peanuts and cheddar cheese. Cover and simmer 1 1/2 hours.

  3. Add beer and simmer uncovered for 30 minutes.

  4. Add handful of peanuts and sprinkle cheese on each serving.
