  1. 400g pack fresh Hokkien noodles

  2. 1 tablespoon peanut or canola oil

  3. 1 tablespoon shredded ginger

  4. 2 tablespoons black bean sauce

  5. 1 tablespoon honey

  6. 1 bunch baby bok choy, trimmed and roughly chopped

  7. 1 bunch broccolini, trimmed and roughly chopped

  8. 100g snow peas, trimmed

  1. Method Place the noodles in a heatproof bowl and cover with boiling water. Stand for 5 minutes then drain and set aside. Heat the oil in a wok or large frying pan over medium-high heat. Add the ginger and cook for 2 minutes then add the combined black bean sauce and honey. Cook for a minute before adding the bok choy and broccolini. Stir fry for 2-3 minutes, add the snow peas and noodles and toss to coat in the sauce. Cook for another minute then serve immediately.
