  1. 1/4 cup vegetable oil (I use safflower)

  2. 1/2 cup Splenda granular , for baking

  3. 1 egg

  4. 1 teaspoon vanilla extract

  5. 3/4 cup white whole wheat flour

  6. 1/4 cup unbleached white flour

  7. 1/4 cup unsweetened cocoa powder

  8. 1/4 teaspoon salt

  9. 1/4 cup semi-sweet chocolate chips

  10. 1/8 cup coarsely chopped walnuts

  11. 1 teaspoon unsweetened cocoa powder, for dusting

  1. Mix together the oil, sugar substitute, egg and vanilla until smooth.

  2. Sift together the flours, cocoa powder and salt.

  3. Stir dry ingredients into the wet ingredients.

  4. Mix in chocolate chips and nuts.

  5. Form into 15 1-1/2 inch balls and place on non-stick cookie sheet.

  6. Bake in a preheated oven at 350 degrees for 10 minutes. Cool for 10 minutes.

  7. While still warm, dust cookies with cocoa powder.
