  1. 2 tsp olive oil

  2. 1/2 cup diced red bell pepper

  3. 1/2 cup diced yellow pepper

  4. 1/2 cup sliced green onions

  5. 2 tbsp curry powder

  6. 3 cup hot cooked rice

  7. 1/4 cup Equal sweetener

  8. 2 tbsp lime juice

  9. 1/2 tsp salt

  10. 20 oz pineapple chunks (drained)

  11. 15 oz black beans (rinsed and drained)

  12. 1/2 cup salted cashews

  14. Procedure:

  15. 1. Saute bell pepper and onion in oil for 2 to 3

  16. min.

  17. 2. Add curry powder and cook on high heat for just few min so that flavor of curry powder mix well with the veggies.

  18. 3. In a large mixing bowl combine cooked rice , Equal, lime juice and salt.

  19. 4. Add cooked vegetable mixture , pineapple and black beans in the rice mixture. Delicious Jamaican rice is ready to serve.
