  1. 1 cup butter , softened

  2. 1 cup white sugar

  3. 1 egg

  4. 2 2/3 cups flour

  5. 1/4 teaspoon salt

  6. 2 teaspoons mint extract

  7. green food coloring

  8. chocolate , for garnish

  1. In a large bowl, cream together the butter and white sugar until light and fluffy.

  2. Beat in the egg, then stir in the mint extract.

  3. Combine the flour and salt; stir into the sugar mixture.

  4. Add several of drops of food coloring until desired shade of green, mixing well.

  5. Roll into a log, wrap in plastic wrap and refrigerate for 1 hour.

  6. Preheat oven to 400°F 7 Slice into 1/4-inch slices and place on cookie sheets.

  7. Bake for 9 minutes in the preheated oven, or until lightly golden at the edges.

  8. Remove from cookie sheets to cool on wire racks.

  9. Drizzle with melted white and/or dark chocolate if desired.
