  1. 1/2 tbsps oil

  2. 1 onion, sliced

  3. 2 1/2ml/ 1/2 tsp turmeric

  4. 5ml/1 tsp coriander

  5. 1/ 1/4a tsp cinnamon

  6. 1/1 tbsp flour

  7. lkg/2 1/4 lbs chicken, shredded and boned

  8. 3 cardamoms

  9. 1/6 fl oz/ 3/4a cup stock

  10. Juice of 1/2 a lemon

  11. 1 bay leaf

  12. Salt and pepper

  13. 1/ 1/4 pint/

  14. 1/2 cup yogurt

  15. 60g/2oz/ 1/2cup cashews

  1. Directions Heat oil for 1 minute in a casserole. Add onion, turmeric, coriander and cinnamon and cook for 2 minutes on HIGH. Stir in the flour and add the chicken, cut into 5cm/2 inch pieces, and cardamoms. Pour over the stock and the lemon juice and stir well. Cover and cook for 20 minutes on HIGH or until the chicken is tender. Stir frequently during cooking. Remove the bay leaf and stir in the yogurt and the cashews. Leave to stand for 3-5 minutes before serving.
