  1. 2/3 cup mashed potato flakes

  2. 1/3 cup grated Parmesan cheese

  3. 2 teaspoons dried parsley flakes, if desired

  4. 3/4 to 1 teaspoon garlic salt

  5. 1 (3 to 3 1/2-lb.) cut-up frying chicken, skinned if desired

  6. 1/3 cup margarine or butter, melted

  1. Heat oven to 375°F. Grease, or line with foil and grease 15x10x1-inch baking pan or 13x9-inch pan.

  2. In medium bowl, combine potato flakes, Parmesan cheese, parsley flakes and garlic salt; mix well. Dip chicken pieces in margarine; roll in potato flake mixture to coat. Place in greased pan.

  3. Bake at 375°F. for 45 to 60 minutes or until chicken is fork-tender and juices run clear.

  4. To reduce fat, dip chicken pieces in 1/3 cup milk instead of margarine.
