  1. olive oil

  2. 4 x 100g red mullet fillets, skin on, bones removed

  3. 2 cloves finely chopped garlic

  4. bird's eye chilli, chopped

  5. 12 leaves basil

  6. punnet cherry tomatoes

  7. sea salt, to taste

  8. 500ml sparkling mineral water

  9. 50g unsalted butter

  10. 4 x 100g potato gnocchi

  1. Heat fry pan with a touch of oil and place fish skin-side down.

  2. Add garlic, chilli, basil, cherry tomatoes and salt.

  3. Flip fish over, add mineral water and reduce by half.

  4. Break fish up with tongs.

  5. Add butter and cooked gnocchi.
