  1. Ingredients (serves 4)

  2. 3 teaspoons olive oil

  3. 4 slices reduced-fat cheese

  4. 4 wholemeal grain rolls, halved

  5. 1 cup shredded iceberg lettuce

  6. 8 slices beetroot

  7. tomato sauce, to serve

  8. Chicken and vegetable patties

  9. 400g chicken breast mince

  10. 1 large zucchini, grated

  11. 1 large carrot, grated

  12. 1 small brown onion, grated

  13. 310g can corn kernels, drained, rinsed

  1. Make patties: Place mince, zucchini, carrot, onion and corn in a bowl. Season with salt and pepper. Shape mixture into 4 balls. Flatten slightly.

  2. Heat oil in a large frying pan over medium heat. Add patties. Cook for 4 minutes each side or until cooked through. Top patties with cheese. Cook for 1 minute or until cheese starts to melt.

  3. Meanwhile, preheat grill. Place rolls, cut-side up, under grill. Cook for 1 minute or until browned. Place lettuce and beetroot on roll bottoms. Top with patties, sauce and roll tops. Serve.
