  1. 1 1/2 cups all purpose flour

  2. 1 cup sugar

  3. 1/2 tsp. salt

  4. 1/2 tsp. ground cinnamon

  5. 1/2 tsp. baking soda

  6. 1/4 tsp. baking powder

  7. 4 large egg whites

  8. 1/2 cup vegetable oil

  9. 1 1/2 tsp. vanilla extract

  10. 1 cup very ripe, mashed banana

  11. 1/4 cup plain yogurt

  12. 1/2 cup golden raisins

  1. Preheat oven to 350 degrees. Line 12 muffin cups with paper liners. Sift together the flour, sugar, salt, cinnamon, baking soda and baking powder into a large bowl. Add the egg whites, oil, vanilla, banana, yogurt and raisins and stir until combined. Divide the batter between the prepared muffin cups. Bake muffins about 20 to 25 minutes until golden. Serve muffins warm or at room temperature.
