  1. 1/2 c Water

  2. 1 tb Chopped fresh mint

  3. Lime mayonnaise

  4. 1 c Golden raisins

  5. 1 c Walnut halves

  6. Dice carrots

  7. 2 Peeled and cut in 1/4-in

  8. Pieces Lengthwise then in 1/2-in

  9. 2 Tart green apples cut Pieces celery stalks

  10. 2 Cored and cut in 1/2-in

  11. Ripe bosc/anjou pears

  12. 2 Cored and cut in half firm

  13. 2 tb Lemon juice

  14. 2 tb Sunflower seeds

  1. Mix water and lemon juice in a large bowl.

  2. Toss in pears and apples; let rest for 10 minutes.

  3. This will prevent discoloration.

  4. Drain fruits, discarding liquid, pat dry and return them to bowl.

  5. Add celery, carrots, walnuts and raisins.

  6. Toss with lime mayonnaise.

  7. Cover and refrigerate for 1 hour.

  8. Before serving, mix well and sprinkle top with mint and sunflower seeds.
