  1. 1/3 cup 20g / 0.7oz Dried cherries

  2. 1 cup 62g / 2 1/5oz Cherry ale

  3. 1 tablespoon 15ml Olive oil

  4. 1 teaspoon 5ml Orange zest - minced

  5. 1 tablespoon 15ml Minced shallots

  6. 1/2 tablespoon 7 1/2ml Red cabbage - cored and shredded (large)

  7. 1/2 teaspoon 2 1/2ml Salt

  8. 1 teaspoon 5ml Sugar

  9. 1 tablespoon 15ml Red wine or balsamic vinegar Freshly ground black pepper - to taste

  10. 2 tablespoons 30ml Fresh parsley - finely minced

  1. Recipe Instructions 1. Combine the dried cherries and ale in a small saucepan and heat just until warm. Remove from the heat and set aside to let cool.

  2. In a large skillet, heat the olive oil over medium heat. Add the orange zest and shallots; saute 1 minute.

  3. Add cabbage, cherry-ale mixture, salt and sugar. Cook, stirring often, for about 15 minutes, or until the cabbage is tender.

  4. Stir in the vinegar, pepper and parsley. Serve immediately.
