  1. Au Gratin Potatoes

  2. 4 to 6. 2-3 Idaho potatoes

  3. 2 tablespoons butter

  4. 1/2 cup diced onion

  5. 2 small cloves garlic, minced

  6. 1 tablespoon fresh chopped parsley

  7. 2 tablespoons flour

  8. 1/4 teaspoon pepper

  9. 1 1/2 cups milk

  10. 1 cup shredded sharp Cheddar cheese

  11. salt and pepper, to taste

  12. Peel potatoes and slice thinly, 1/8-inch slices on a mandoline.

  13. Rinse and cover with water in a medium saucepan. Bring to a boil;

  14. boil for 2 minutes. Drain and rinse with cold water to stop cooking.

  15. In a saucepan, melt butter over medium-low heat. Add the diced onion

  16. and saute until tender; add minced garlic and parsley. Stir in

  17. flour and pepper until smooth. Gradually add milk, cooking and stirring over medium-low heat until thickened. Stir in cheese until
