    2. 2 lbs carrots, peeled & sliced

    3. 2 teaspoons lemon juice

    4. 1 teaspoon orange zest

    5. 1/4 teaspoon nutmeg, ground

    6. 1/3 cup apricot preserves

    7. Salt, for taste

    1. Directions In a pot, add sliced carrots and salt with water. Mix properly and let the carrots boil over low heat. Once the carrots are tender, drain the water, and keep the carrots on the side. In a bowl, mix butter and apricots together. Combine and add nutmeg, salt, orange zest, and lemon juice together. Finally, add carrots and stir everything together. Sprinkle parsley leaves on top and serve.

    2. Creamy Mashed Potatoes Ingredients 5 large potatoes, cut in 1'' pieces 3 ½ cups chicken broth 2 tablespoons butter ½ cup light cream Salt and black pepper, for taste Directions In a pot, boil potato slices in chicken broth. Once potatoes turn tender, drain the broth, but save it. In a bowl, mash the potatoes and add a little bit of broth to keep them from drying out. Add cream, salt, butter, and black pepper in. Mix everything properly and make a creamy mashed potatoes. You can add more broth to keep the mashed potatoes at the right consistency.

    3. Creamy Dill Cucumber Toasties Ingredients 2 teaspoons dill weed, dried 1 cucumber, peeled and thinly sliced 1 package cream cheese, softened 1 package Italian-style salad dressing mix, dried 1 French baguette, ½'' thick slices ½ cup mayonnaise Directions In a bowl, combine cream cheese, Italian salad dressing mix, and mayonnaise together. Spread this mixture over a slice of bread and place a thin slice of cucumber. Sprinkle dill weed on top and serve.

Delicious Deviled Eggs Ingredients 6 eggs ½ stalk celery, chopped ¼ onion, chopped ¼ cup mayonnaise Salt and black pepper, for taste Dash of hot pepper sauce Paprika, for garnish Directions For our next healthy Easter recipes , we will prepare deviled eggs. Spinach & Strawberry Salad Ingredients 4 cups strawberries, sliced 2 bunches spinach, rinsed & torn 2 tablespoons sesame seeds 1 tablespoon poppy seeds ½ cup vegetable oil ½ cup white sugar ¼ cup white wine vinegar ¼ teaspoon paprika Directions In a bowl, mix spinach and strawberries together. Take a different bowl to make the dressing in. Combine vegetable oil, vinegar, sugar, paprika, poppy and sesame seeds properly. Pour this dressing over spinach and strawberries. Toss and serve.

    6. Honey Glazed Ham Ingredients 5 lbs ham, ready-to-eat 2 cups honey ¼ cup cloves, whole ¼ dark corn syrup 2/3 cup butter Directions Preheat the oven at 325º F. With a knife, score ham and place whole cloves in. Keep the ham over a baking pan lined with aluminum foil. Now let's prepare the glaze. On a double boiler, mix corn syrup, butter, and honey together. When the glaze is warm and ready, brush it over the ham generously. Bake ham for about an hour and 15 minutes. You can baste the ham after every 15 minutes to keep it moist and give that great color over it. When the ham is almost ready, switch the oven to broil to caramelize the glaze. Remove the ham from oven once cooked and wait for few minutes before you serve.
