  1. 2 x 350g heart-smart roast lamb rounds

  2. 2 tablespoons basil pesto

  3. 6 slices prosciutto, halved crossways Thyme and garlic roasted vegetables, to serve (see related recipe)

  1. Method Preheat oven to 220°C/200°C fan-forced. Line a roasting pan with baking paper. Place lamb in prepared pan. Spread each with 1 tablespoon pesto. Season with pepper. Arrange prosciutto, overlapping slightly, over lamb. Roast for 30 minutes for medium or until cooked to your liking. Stand, covered, for 5 minutes. Thinly slice lamb. Divide between plates. Serve with roasted vegetables.
