  1. 1 tablespoon 15ml Minced onion

  2. 2 tablespoons 30ml Butter or margarine

  3. 2 tablespoons 30ml Flour

  4. 2 cups 474ml Chicken broth

  5. 2 cups 474ml Half-and-half

  6. 1 lb 454g / 16oz Alaska dungeness crab meat - thawed if necessary

  7. Salt - to taste

  8. Chopped parsley

  1. Saute onion in butter. Add flour; cook and stir 1 minute. Gradually stir in chicken broth and half-and-half; cook and stir 5 minutes.

  2. Break crab into chunks; add to broth. Salt to taste. Heat thoroughly. Garnish with parsley This recipe yields 4 to 6 servings.
