  1. White fish fillets 4 , marinated in mojo

  2. Cooked brown rice 3 Cup (48 tbs)

  3. Salsa 2 Cup (32 tbs)

  4. Diced pineapple 1 Cup (16 tbs)

  5. Chopped cilantro 1 Cup (16 tbs)

  6. Black beans 1 12 Can (15 oz) , drained and rinsed

  7. Salt To Taste

  8. Pepper To Taste

  1. Directions In a large bowl, mix rice, salsa, pineapple, cilantro, and black beans. Pour into a baking dish.

  2. Place the marinated fish on the top of the rice mixture. Pour some of the Mojo marinate from the fish over the top of the fish.

  3. Bake at 400 degress for 25 minutes.

  4. Remove from oven and let sit for 5 mintues.
