  1. 125g butter

  2. 1/2 cup brown sugar

  3. 1/2 cup golden syrup

  4. 1 egg yolk

  5. 2 1/2 cup plain flour

  6. 1 tblspn ground ginger

  7. 1 teaspoon bicarb soda

  8. 1 egg white

  9. 1 1/2 cup icing sugar

  10. Assorted food colours

  1. Preheat oven to 180 degrees and line two trays with baking paper Cream butter and sugar in small bowl with electric beaters until light and fluffy Add egg yolk and syrup beating thoroughly Transfer mixture to large bowl. Add sifted dry ingredients in two batches Press mixture into a ball and knead on a lightly floured surface until smooth Refrigerate, covered if possible for 15 minutes Roll between two sheets of grease proof paper to 5mm thickness Cut into shapes using cutters Place them about 3cm apart Bake for 10 minutes or until lightly browned Cool on trays Whisk egg white in a small bowl until foamy Gradually add icing sugar one teaspoon at a time Colour as desired Place icing in piping bags and decorate as desired
