  2. 3/4 cup hard butter or margarine, softened

  3. 1 1/4 cup sugar, divided

  4. 1 large egg

  5. 1/2 cup mild molasses

  6. 2 1/2 cups flour

  7. 2 teaspoons baking soda

  8. 2 teaspoons ground ginger

  9. 1 teaspoon ground cinnamon

  10. 1/2 teaspoon salt

  1. Preheat oven to 350.

  2. Beat together the butter and 1 cup of sugar.

  3. Mix in the egg and molasses, beating until creamy.

  4. In a separate bowl, stir together the flour, baking soda, ginger, cinnamon, and salt.

  5. Add dry ingredients to butter mixture several tablespoons at a time, making sure it's fully blended.

  6. Roll into 1-inch balls, then place in a small bowl containing the remaining sugar. Move ball around so it gets a light covering of sugar.

  7. Repeat with remaining dough.

  8. Place on lightly greased baking sheets and bake for 10 minutes.
