  1. 1 1/2 cups 355ml Water

  2. 1 cup 237ml Bulgur

  3. 1/2 teaspoon 2 1/2ml Salt (approx)

  4. 6 Green onions - sliced

  5. 2 Tomatoes - seeded and chopped

  6. 1 1/3 cups 194g / 6.8oz Seedless cucumber - diced

  7. 1 cup 146g / 5.1oz Fresh parsley - chopped

  8. 6 1/2 oz 184g Canned chunk tuna - drained and flaked

  9. 3 tablespoons 45ml Olive oil

  10. 2 tablespoons 30ml Lemon juice

  11. Pepper

  1. Serve this main course in hollowed-out tomato cups or lettuce-lined pita pockets.

  2. In 8-cup casserole, combine water, bulgur and salt; cover and microwave at high until boiling, 6 minutes. Stir; let stand, covered, for 10 minutes.

  3. Add onions, tomatoes, cucumber, parsley and tuna; toss well.

  4. Toss with oil and lemon juice; season with pepper and salt to taste.

  5. Serve at room temperature.
