  1. Ingredients :Serves 4

  2. 2 3 tablespoons 1 tablespoon 1/2 teaspoon 1 teaspoon 125 ml 1/2 teaspoon 1 teaspoon 1/2 teaspoon Crabs, about 1 1/2 kg

  3. Cooking oil, for deep frying

  4. Garlic, finely chopped

  5. Annatto seed oil

  6. Spring onion (scallion), finely chopped

  7. Chicken stock or water

  8. Salt

  9. Sugar

  10. Ground white pepper

  1. Clean crabs. Pull top shells off crabs andremove feathery lungs. Rinse.

  2. Pull off triangular-shaped shell on theunderside and rinse crab again.

  3. Twist off claws and crack. Cut crabs inhalf.

  4. Heat oil in a wok and deep fry crabs overhigh heat for 10 minutes.

  5. Remove and drain well.

  6. Leaving 1 tablespoon oil in the wok, stirfry garlic until fragrant then return crabs to wok and stir fry forabout 5 minutes.

  7. Add remaining ingredients and stir fry fora few more minutes until crabs are well-coated in sauce.

  8. Remove from heat and serve.
