  1. 1 pound Italian sausage

  2. 1 large onion, chopped

  3. 5 cloves garlic, chopped

  4. 1 large green pepper, chopped

  5. 2 cups mushrooms, sliced

  6. 1 large can tomato sauce

  7. 1 medium can tomato paste

  8. Extra Virgin Olive Oil

  9. Red wine

  10. Salt and pepper

  11. 1 tablespoon oregano

  12. 2 bay leaves

  13. Spaghetti noodles

  14. Parmesan cheese, grated

  1. Heat about two tablesppons of olive oil in a large, heavy skillet over medium-high heat. Remove sausage from casings and chop roughly. Brown in the olive oil. While sausage is cooking, saute onion and garlic in three tablespoons olive oil in a large pot. When sausage is completely cooked, drain adn add to onion and garlic. Add tomatoes, bell pepper and mushrooms. Stir thorougly and bring to a boil. Add red wine to desired consistency and taste. Add oregano and bay leaves, and salt and pepper to taste. Reduce heat, cover, and simmer all day, stirring occasionally. Remove bay leaves before serving. Serve over hot cooked spaghetti noodles and top with cheese.
