  2. ROASTED GARLIC POTATO SOUP

  6. 5 Whole Garlic Heads

  7. 2 Bacon slices -- diced

  8. 1 c Onion -- diced

  9. 1 c Carrot -- diced

  10. 2 Garlic cloves -- minced

  11. 6 c Baking Potato -- diced

  12. -above aprox 2 pounds

  13. 4 c Chicken broth -- low salt

  14. 1/2 ts Salt

  15. 1/4 ts Pepper

  16. 1 Bay Leaf

  17. 1 c 2% low-fat milk

  18. 1/4 c Parsley -- fresh chopped

  19. Notes: Thickened by mashed potatoes, this rich soup

  20. gets its hearty, smoky flavor from the addition of

  21. bacon and garlic.

  22. Remove white papery skin from each garlic head (do

  23. not peel or separate cloves). Wrap each head

  24. separately in aluminum foil. Bake at 350F degrees for 1 hour; let cool for 10 minutes. Separate cloves, and squeeze to extract 1/4 cup of garlic pulp; discard the

  25. skins.

  26. Cook bacon in a large saucepan over medium-high

  27. heat until crisp. Add onion, carrot, and minced

  28. garlic, and saute 5 minutes. Add potato, broth, salt,

  29. pepper, and bay leaf; bring to a boil. Cover, reduce

  30. heat, and simmer 20 minutes or until potato is tender;

  31. remove bay leaf.

  32. Combine garlic pulp and 2 cups potato mixture in a

  33. blender or food processor and process until smooth.

  34. Return puree to pan; stir in milk, and cook over low

  35. heat until thoroughly heated. Remove from heat and stir in chopped parsley. - - - - - - - - - - - - - - - - - -
