  2. 3 or 4 bunches of spinach, washed

  3. Pot of water

  4. Salt to taste

  5. 2 tablespoons vegetable butter

  6. 2 tablespoons flour

  1. Remove the dry leaves, if any, from the spinach.

  2. Drain, add boiling water barely to cover, and let boil quite rapidly until very tender, adding salt to taste.

  3. Rub together the vegetable butter and flour in a saucepan over heat. Add a little of the hot broth, and stir smooth.

  4. Add this to the spinach and boil up.

  5. Mash through a colander or a coarse strainer, and season with hot cream or cold canned milk.

  6. An onion may be boiled in the spinach if desire. .
