  1. 500 ml of good white wine

  2. 500 ml of fresh orange juice

  3. Rind of 1 orange (grated)

  4. 1/3 Cup of sugar

  5. 3 slices of fresh ginger

  6. 1 tea bag

  7. Pinch of Saffron threads

  8. 1 or 2 star anise

  9. 6 large ripe pear s (peeled, cored), quartered

  1. Combine all the ingredients and bring to a slow boil. Simmer for 10 minutes. Cook for 20 minutes or until the pears feel cooked. Cool.

  2. Serve with cream or creama catalana (see other recipe).
