  1. 3 Tablespoons butter

  2. 2 large shallot s, finely chopped

  3. 1 Tablespoon tomato paste ( or to taste)

  4. 2 cups beef stock or canned beef broth

  5. 1 1/2 c dry white wine

  6. 1 c whipping cream

  7. 6- 8 to 10 oz. New York strip steak s, trimmed

  8. 1 Tablespoon chopped fresh parsley

  1. Melt Tablespoon butter in heavy medium saucepan over medium-high heat. Add shallots and sauté 2 minutes. Add tomato paste; cook 1 minute. Stir in stock and wine; boil until reduced to 1 cup about 16 minutes. Add cream and boil until sauce coats spoon, about 7 minutes.

  2. Pour sauce over steaks and sprinkle with parsley P.S. this can also be served on lamb chops.
