  1. 3 tbsp. lemon juice

  2. 2 tbsp. sugar

  3. 1/2 tsp. salt

  4. 1/4 tsp. ground cumin

  5. 1/8 tsp. cayenne pepper

  6. 453 g carrots, peeled and cut into julienne

  7. 1/2 cup thin sliced soft dried figs

  1. Whisk together lemon juice, sugar, salt, cumin and cayenne in a large bowl until sugar and salt dissolve. Add julienned carrots and figs. Toss well to coat. Let stand 30 minutes at room temperature, tossing occasionally, until carrots are wilted.
