  1. 400 g (0.9 lb) white navy beans

  2. 1/2 cup oil

  3. 1 onion, finely chopped

  4. 100 g (3 1/2 oz) bacon, chopped

  5. 1 tsp paprika

  6. 1 Tbsp tomato paste

  7. 2 garlic cloves, minced

  8. 1 Tbsp flour

  9. 2 dried peperoncini salt, black pepper

  10. 2 sausages, cut into slices

  11. 1/2 tsp dry mint or parsley leaves

  1. Soak beans overnight in water. Drain and rinse beans, then cook beans until tender. Do not overcook. Drain beans, reserving some cooking liquid (about 1 cup). In a large skillet, heat the oil, and saute onions and bacon until onions are translucent. Add paprika, tomato paste, garlic and flour. Add beans together with cooking liquid and peperoncini. Season with salt and pepper. Cook for a short time. Put in a casserole, mix beans with sausage slices, sprinkle with mint leaves and bake at 220°C (425 F) for 20 to 25 minutes.
