  1. 2 tbsp. olive oil

  2. 1 onion, chopped

  3. 4 garlic cloves, minced

  4. 3 lbs. skinned chicken breast halves, on the bone Salt and pepper

  5. 1 1/2 cups tomato sauce

  6. 1/2 tsp. dried rosemary

  7. 1/2 tsp. dried thyme

  8. 1/2 cup chopped parsley

  9. 1 1/2 cups oil-cured black olives

  1. In a skillet, heat the oil and cook the onion and garlic until translucent. Add the chicken, season with salt and pepper, and turn in the oil until golden. Add the tomato sauce, rosemary, thyme, parsley and olives. Mix, then cover and cook over low heat for 45 minutes or until the chicken is falling off the bone tender. Makes 4 to 6 servings.
