  1. 4 Tbsp. salted butter , room temperature

  2. 1-1/2 Tbsp. finely chopped fresh tarragon or herb of your choice

  3. 1/2 tsp. lemon zest , finely grated

  4. 1/4 tsp. freshly ground black pepper

  5. Few drops lemon juice

  6. 4 (8-10 oz.) New York strip steaks (3/4" to 1" thick)

  7. coarse salt and freshly ground black pepper

  1. Heat grill to high.

  2. Cream butter, herbs, zest, pepper and juice.

  3. Mound in center of plastic wrap square.

  4. Roll into cylinder, twisting the ends of plastic to seal.

  5. Put rubber bands on ends to hold the seal.

  6. Chill until firm.

  7. Season steaks liberally, then grill to your desired doneness.

  8. Top with 1/2" thick slice of Herb Butter and rest 3 minutes.
