  1. 2 cups 474ml Ripe avocados - (abt 3/4 lb ea) (large)

  2. 1 Spam luncheon meat - (7 oz) - cut in chunks

  3. Juice of 1 lemon

  4. 1/2 cup 118ml Dairy sour cream

  5. 1/4 teaspoon 1 1/3ml Salt

  6. Few drops hot pepper sauce

  7. 1 Unflavored gelatin

  8. 1/4 cup 59ml Cold water

  9. Lettuce leaves

  10. Pitted black olives

  1. Halve, pit, and peel avocados; cut into chunks. Combine avocado, Spam, lemon juice, sour cream, salt, and pepper sauce in food processor or blender and process until smooth.

  2. Soften gelatin in cold water; dissolve over boiling water. Stir in avocado mixture. Divide into eight 1/2-cup molds. Refrigerate at least 2 hours. To serve unmold onto lettuce-lined salad plates; garnish with black olives, if desired.

  3. Nice to know: You can make this salad in individual molds or in one 4-cup mold.
