  5. 4 ea Potatoes; medium

  6. 4 ea Bacon; strips, cubed

  7. 3 ea Eggs; large

  8. 3 tb Milk

  9. 1/2 ts Salt

  10. 1 c Ham; cooked, small cubes

  11. 2 ea Tomatoes; medium, peeled

  12. 1 tb Chives; chopped

  13. Boil unpeeled potatoes 30 minutes. Rinse under cold water, peel and set

  14. aside to cool. Slice potatoes. In a large frypan cook bacon until

  15. transperent. Add the potato slices; cook until lightly borwned. Meanwhile

  16. blend eggs with milk and salt. Stir in the cubed ham. Cut the tomatoes

  17. into thin wedges; add to the egg mixture. Pour the egg mixture over the

  18. potatoes in the frypan. Cook until the eggs are set.

  19. Sprinkle with chopped chives and serve at once. --
