  1. 2 medium zucchini , thinly sliced

  2. 1 egg

  3. 1 teaspoon prepared mustard

  4. 1/8 teaspoon white pepper

  5. 1/8 teaspoon ground nutmeg

  6. 1 green onion , thinly sliced

  7. 1/2 cup lowfat swiss cheese , grated

  1. Put the zucchini in a colander or on towels to drain off the moisture.

  2. Combine the remaining ingredients.

  3. Add the zucchini and mix well.

  4. Pour into a lightly oiled 2-quart casserole.

  5. Bake at 350 degrees F for 40 to 45 minutes.
