  1. Pineapple Cheese Mold

  2. 3 oz pkg lemon gelatin

  3. 1 cup boiling water

  4. 3/4 cup pineapple juice

  5. 1 Tbsp lemon juice

  6. 1 1/4 cups drained crushed pineapple

  7. 1 cup shredded sharp cheddar cheese

  8. 1 cup cream whipped

  9. Dissolve gelatin in the water and add juices. Chill until slightly

  10. thickened. Fold in crushed pineapple, cheese and cream. Place in

  11. 1 1/2 qt mold and chill firm. UnmoldNice over lettuce leaf cups.

  12. Use as a refreshing salad course.
