  2. INDIAN FRENCH TOAST

  7. 1/3 c Besan (chick pea) flour

  8. 1/4 c Mashed tofu

  9. 3/4 c Water

  11. 4 tb Margarine

  12. 2 -to

  13. 4 Hot green chilies

  14. 1/4 c Cilantro

  15. 1 sl Ginger (1/2")

  16. 2 tb Chopped onion

  17. 1/2 ts Salt -- to taste

  18. 4 sl Bread

  19. (I like sourdough, and I recommend not using a

  20. really dark type.)

  21. Put everything but the bread and margarine into the

  22. blender/food processor/ other implement of destruction

  23. and blend until the herbs are medium chooped. Pour the

  24. resulting batter into a wide shallow dish. (She says

  25. it'll keep three days covered in the frig, if you plan

  26. meals that far ahead. I don't.)

  27. Melt the margarine in a big skillet or frying pan.

  28. Soak one slice of bread at a time in the batter until

  29. pretty gloppy, then toss into the skillet and fry

  30. until the bottom is medium brown, then flip and cook

  31. about another minute.

  32. Serve right off the stove.
