  3. 1/2 cup 73g / 2.6oz Diced zucchini

  4. 1 1/2 cups 355ml Fresh raspberries

  5. 6 tablespoons 90ml Extra-virgin olive oil

  6. 2 tablespoons 30ml Freshly-squeezed lemon juice

  7. 1 teaspoon 5ml Salt

  8. 2 teaspoons 10ml Warm honey

  1. Recipe Instructions In a medium bowl combine the lettuce, radishes, zucchini, and raspberries. Set aside. In a smaller bowl, whisk together the olive oil, lemon juice, salt, and honey until the dressing is well blended. Pour mixture over the vegetables and raspberries and toss gently. Serve immediately. This recipe yields 4 servings.
