  2. Spicy Black-Eyed Peas (Great Cajun Dish)

  7. 15 Oz. Can Blackeyed Peas

  8. 1 Tablespoon Vegetable Oil

  9. 1 Large Onion -- chopped

  10. 3 Cloves Garlic

  11. 1 Tablespoon Green Pepper -- minced

  12. 1/4 Teaspoon Cumin

  13. 1/2 Teaspoon Tumeric

  14. 1/4 Teaspoon Cayenne Pepper

  15. 1 Cup Tomato Juice --see note

  16. 2 Tablespoons Lemon Juice

  17. We used diced tomatoes.

  18. Heat the vegetable oil in a large skillet and fry onion until golden.

  19. Add garlic, green pepper, tumeric, and cayenne pepper and fry

  20. for 2-3 minutes. Add tomato juice (or tomatoes) and cumin and cook for 5 minutes. Next add black-eyed peas and a little water

  21. if needed. Let it simmer for 15 minutes. Stir in lemon juice.

  22. Serve over rice or cous cous.
