  2. CROCK-POT CHICKEN CACCIATORE

  6. 1 Onion, medium -- sliced

  7. 1 Celery stalk w/leaves

  8. 1-inch pieces 2 cn Tomato paste --

  9. 6 oz. each - 1 can w/garlic

  10. 1/2 c Chianti -- or any wine

  11. 1/4 ts Pepper

  12. 1 t Creole seasoning

  13. 1 Bay leaf

  14. 6 Mushrooms, large -- sliced

  15. 3 Garlic cloves

  16. 1/2 ts Basil

  17. 2 ts Oregano

  18. 1 Chicken, whole, about 3 lbs.

  19. Place sliced onion in bottom of crock-pot. Add

  20. chicken -- you can either use a whole chicken or chop

  21. it up in pieces. Stir together tomato paste (as

  22. indicated, I used 1 can of "regular" tomato paste and 1 can with garlic

  23. 1/4 cup of wine. I

  24. went against "tradition" and used a red wine. I like

  25. the way reds blend with tomato sauces. In this case,

  26. I used a light Chianti. Pour over chicken. Pour

  27. remaining wine over chicken as well. Cover and cook

  28. 7 to 9 hours (HIGH 3 to 4 hours). Serve

  29. chicken over hot buttered spaghetti, vermicelli,

  30. fettucini, or other pasta. - - - - - - - - - - - - - - - - - -
