  1. 2 (15 oz) can(s) black eyed peas

  2. 1/2 cup(s) red onions, thinly sliced and separated into rings

  3. 1/2 cup(s) chopped green pepper

  4. 1 garlic clove

  5. 3 tablespoon(s) brown sugar

  6. 1/2 cup(s) white vinegar

  7. 1/4 cup(s) vegetable oil

  8. 1/2 teaspoon(s) salt

  9. dash freshly ground pepper

  10. hot sauce to taste

  1. Combine peas, onions, and green pepper in a medium bowl. Stick a toothpick through the garlic, add to vegetables. Combine remaining ingredients stirring well. Add to vegetable mixture and toss lightly to coat. Cover; refrigerate at least 12 hours. Remove the toothpick with garlic before serving.
