  1. 6 medium vine-ripened tomatoes

  2. 1/2 red onion, cut into thick slices

  3. 1 jalapeno chile

  4. 2 cloves garlic, unpeeled

  5. 2 tablespoons olive oil, divided

  7. 1/4 cup roughly chopped fresh cilantro

  8. 2 tablespoons fresh lime juice

  9. 1/2 teaspoon ground cumin

  1. Preheat the oven to 450F.

  2. Place the tomatoes, onion, jalapeno, and garlic on a baking sheet and drizzle with 2 tablespoons of the olive oil.

  3. Season with salt and pepper and roast in the oven for 10 minutes or until the vegetables have started to blister.

  4. Remove from the oven and allow to cool slightly.

  5. Peel, seed, and chop the tomatoes roughly. Seed the jalapeno and chop finely. Peel and mince the garlic, and finely dice the onion.

  6. Remove from the oven and allow to cool slightly.

  8. Mix the vegetables in a large bowl and add the cilantro, lime juice, and cumin.

  9. Season the salsa to taste with salt and pepper and serve.
