  1. Potato Pancakes

  2. cold mashed potatoes

  3. egg

  4. salt

  5. pepper

  6. finely chopped onion

  7. Mix together about 2 cups of mashed potatoes, an egg, a dash of

  8. salt and pepper, and as little or much onion as you like (none is

  9. 3/4 of an inch thick.

  10. Fry in a bit of margarine or butter until both sides are nicely

  11. browned and the center is hot. Serve as a side, or a light meal/snack

  12. if you like.
