  1. 3 Boneless skinless chicken breasts - halved

  2. 1/2 teaspoon 2 1/2ml Salt -

  3. 1/2 teaspoon 2 1/2ml Nutmeg

  4. Freshly-ground black pepper - to taste

  5. 1 tablespoon 15ml Olive oil

  6. 1 tablespoon 15ml Apricot jam

  7. 1/2 teaspoon 2 1/2ml Tarragon

  8. 4 Green onions - chopped

  9. 1/2 cup 118ml Dry white wine

  10. 1 cup 237ml Seedless green grapes

  11. 1/4 cup 59ml Evaporated fat-free milk

  1. Sprinkle chicken with salt, nutmeg, and pepper. In large nonstick skillet, heat oil. Brown chicken breasts on each side.

  2. Add jam, tarragon, green onions, and wine. Cover, reduce heat to simmer, and cook 15 minutes. Add grapes and cook 5 minutes. Remove chicken and grapes with slotted spoon and keep warm.

  3. Add milk to the pan. Turn heat up and reduce, uncovered, until liquids thicken. Spoon over chicken and grapes and serve.

  4. This recipe yields 6 servings. Serving size: 1/6 recipe.
